With regards to trailer availability on Evil Angel, I find it extremely ironic that Elegant Angel's new site provides trailers for older releases whereas the previously had a very quick time after which trailers were not available. As far as claiming that trailer downloads were driving down DVD sales - look at the left side of the site (when its up). It's ads for VOD as well and the director branded web sites, which are outlets that compete with DVD sales.

I like standalone hardware for video encoding, rather than tying up a PC for hours on end, at least for the initial capture. Something like the Sony VRD-MC series looks good if you want to end up with a DVD you can play on a DVD player at the end. Probably overkill for only two tapes though.

Adding metadata when you have a variety of source formats is difficult at best. A naming standard as outlined by Bob is workable, if low-tech. You'll need to build some command-line tools to, for instance, search for all anal scenes after 2005 by a certain star. Look at http://www.romcenter.com/datafiles/tosec/tosec_naming_convention.htm for an example of this approach applied to non-video files. The important thing is to be consistent. The alternative is to convert to a single format (container) that allows good metadata, and add it from once in that format.
